Gino D’acampo makes a delicious roasted apricot with pistachio and cardamom biscotti biscuits served with ice cream on Let’s Do Lunch with Mel and F1’s Susie Perry.
The ingredients for the biscotti: 150g strong white flour, 75g caster sugar, 1 tsp baking powder, 1 tsp vanilla extract, 1 egg beaten, The zest of an orange, 2 cardamom pods and 50g shelled pistachio nuts.
For the roasted apricots: 12 apricots, halved and stones removed, 1 cinnamon stick, 1 star anise, 6 tbsp honey, 50ml orange juice and 2 tbsp orange liqueur or amaretto.
