Clodagh Mckenna served up a tasty pineapple glazed Christmas ham with cherries, red cabbage slaw, ginger and chilli cranberry sauce and on This Morning.
The ingredients for the ham are: 2kg ham, 220g can of pineapple rings, 125g dark soft brown sugar, 16 whole cloves and Jar of cherries.
For the sauce: 200g sugar, 100ml water, 6 whole cloves, 2 inch of fresh ginger, peeled, 400g fresh cranberries, 1 cinnamon stick and 1 chili, leave whole.
For the slaw: 100ml Mayonnaise, Juice of 1 lemon , 1 tbsp flat parsley, finely chopped , ¼ red cabbage, peeled and cut into strips , 1 stick of celery, thinly sliced , 2 red apples, cored and cut into strips, 1 carrot, peeled and grated, 2 tsp dried cranberries , Sea salt and freshly ground black pepper.
