Mary Berry served up a delicious Party Cheesecake with Mango and Passionfruit Salsa on Mary’s Foolproof Dinners with Will Kirk.
The ingredients for the base are: 100g butter, melted and 200g Digestive biscuits, finely crushed.
For the filling: 700g full-fat cream cheese, 125g caster sugar, 1 tbsp plain flour, 2 tsp vanilla extract, zest of ½ lemon, 1 tsp fresh lemon juice, 2 eggs, beaten and 150g sour cream.
For the mango and passionfruit salsa: 4 passionfruit, 350g mango, peeled and diced (prepared weight), juice of ½ lime and 2 tbsp icing sugar.
