Charlie Bigham chicken with ginger, honey and almonds and Persian rice recipe

Charlie Bigham served up tasty chicken thighs with ginger, honey and almonds and Persian rice on this morning.

The ingredients are: 3 large onions, sliced, 5 tablespoons of olive oil, 4 garlic cloves, finely chopped, 1 tbsp ground cumin, plus 1 heaped tsp, 1 tbsp ground ginger, plus 1 heaped tsp, 1 tsp chilli flakes (optional), 8-12 skin-on bone-in chicken thighs, Juice of 1 lemon, 50g ground almonds, 50g flaked almonds, Generous drizzle (about 2 tbsp) runny honey, Handful of parsley leaves, finely chopped, Sea salt flakes and freshly ground black pepper.

For the rice: 500g white basmati rice, 75g butter, A few saffron thread, 30g shelled, unsalted pistachio nuts, roughly chopped, 40g sultanas, Handful of flat leaf parsley leaves, chopped and Sea salt flakes.
