Marcus Wareing served up a tasty soy and miso glazed aubergine steak with a spicy peanut sauce for a skills test on Masterchef The Professionals.
The ingredients include: aubergine, cut in half.
For the glaze and cooking liquid: vegetable stock, miso paste, mirin rice wine and premium light soy sauce.
For the peanut sauce: ginger, garlic, red chilli and olive oil – blended in a food processor to make a ginger, garlic mix.
Chilli powder, cumin powder, ground coriander and turmeric – dry roasted in a pan for a few seconds – then add peanut butter, coconut milk, sweet soy sauce and the ginger garlic mix.
To serve: chopped peanuts, fried curry leaves and the miso glazed formed by reducing the cooking liquid.
