Judi Love served up a taste of the Mediterranean with her spicy lamb chops with saffron rice and a yoghurt, mint and cucumber dressing on Judi Love’s Culinary Cruise.
The ingredients are: 6 lamb chops, bones French-trimmed, 2 tbsp light olive oil, ½ tsp ground cumin, ½ tsp paprika, 1 tsp all-purpose seasoning, ¼ tsp ground allspice, 1 long red chilli, finely chopped, 40g butter, 1 tbsp honey and lemon wedges to serve.
For the mint yoghurt: 200g Greek yoghurt, 1 small cucumber, deseeded & finely diced, 1 small garlic clove, finely grated, 2 tbsp mint, finely chopped and Juice of ½ lemon.
For the saffron rice: 1 tbsp olive oil, 20g butter, 1 clove garlic, finely chopped, 300g long grain rice, 1 small pinch saffron or ½ tsp ground turmeric (optional) and 600ml chicken stock.
