Judi Love served up a taste of the Mediterranean with her mussels with curry powder in a fennel and white wine sauce on Judi Love’s Culinary Cruise.
The ingredients are: 1kg mussels, 200ml white wine, 60g butter, 1 tbsp olive oil, 3 banana shallots, finely chopped, 2 cloves garlic, grated , ½ fennel bulb, finely diced, 1 tsp mild curry powder, 200ml double cream and Salt and freshly ground pepper.
Fresh dill, finely chopped to garnish and Crusty bread to serve.
