James Martin served up a tasty roast chicken cooked in hay with wild mushrooms and mashed potatoes on James Martin’s Saturday Morning.
The ingredients are: 1.6kg chicken, corn fed, 3 handfuls of hay, Few sprigs of lavender and 75g butter.
For the sauce: 1 tbsp veg oil, 100g bacon lardons, 300g wild mushrooms, 1 shallot, peeled and diced, 1 garlic clove, crushed, 100ml Noilly Prat, 200ml veal stock, 100ml double cream, Knob of butter and Splash of sherry vinegar.
To serve: Mash, butter and cream.
