Mary Berry served up a tasty vegetarian lasagne melanzane with Aubergines and tomato sauce for Alan Carr on Mary’s Foolproof Dinners.
The ingredients are: 3 aubergines, sliced lengthways into 1cm slices, 3-4 tbsp olive oil, 2 large onions, finely chopped, 4 garlic cloves, finely grated, 1 x 400g tin chopped tomatoes, 1 x 500g carton passata, 2 tbsp sun-dried tomato paste, 1 tbsp freshly chopped oregano, 1 small bunch of basil, leaves roughly chopped, 3 fresh or dried lasagne sheets, 250g mozzarella, broken into pieces and 115g Parmesan, coarsely grated.
