Rustie Lee served up tasty Jamaican lamb curry patties with rough puff pastry for a taste of the Caribbean on this morning.
The ingredients for the pastry are: 500g plain flour, 2 tsp salt, 500g butter, cold and cut into medium sized cubes and 300ml cold water.
For the filling: 2 tbsp olive oil, 500g minced Lamb, 1 tsp salt, 1 medium onion, chopped, 2 cloves garlic, chopped, 2 tsp thyme, 1 – 2 tsp finely chopped Scotch bonnet pepper, 1 tsp black pepper, 2 tbsp mild curry powder, 1½ tbsp tomato puree, 6 oz water, 2 tbsp plain flour (dissolved in 4 tbsp water to thicken), 1 block rough puff pastry and 1 whole egg, whisked with 2 tsp cold water for the egg wash.
