Marcus Wareing served up a tasty white bean soup with fried mackerel, roasted bell pepper and sherry on toast on Marcus in the Med: Mallorca.
The ingredients for the soup are: 1 white onion, diced, 2 garlic cloves, finely sliced, 50ml olive oil, 2 tins of white beans (400g each), drained, 50ml white wine, 1 tsp thyme, Sea salt and black pepper, 190ml chicken stock (or vegetable stock), 50ml cream and 100g unsalted butter, cubed.
For the toast: Loaf of crusty white bread and 2 tbsp olive oil.
For the fish: 1 mackerel, gutted, 2 tbsp olive oil, Small jar of roasted red peppers (approx. 300g), 1 lemon, juiced, 50ml sherry and 1 tsp parsley, roughly chopped.
