Marcus Wareing served up tasty clams and ham with sherry and fresh herbs on Marcus in the Med: Mallorca.
The ingredients are: 1 large head of garlic, unpeeled, sliced horizontally in half, 1 shallot, finely sliced, 1 packet Serrano ham or bacon, finely sliced, half for cooking, half for serving, Extra virgin olive oil, 500g Whole clams (washed), Sherry, Fresh parsley, finely diced, Fresh marjoram, finely diced, Fresh thyme, finely diced, 100ml fish stock, 1 lemon, halved, Sea salt and Freshly cracked black pepper.
Fresh white bread to serve.
