Phil Vickery roasted cauliflower steak with white sauce and a chili and tomato relish on this morning.

The ingredients are: 1 medium cauliflower, 1 tsp turmeric powder , 1 tsp sweet paprika powder, Sprinkle chilli flakes , 2 tbsp olive oil , Salt and pepper and 200g grated Cheddar cheese.

For the sauce: 300ml milk, Pinch fresh nutmeg, 50g butter, soft, 40g plain flour, 150g grated extra strong Cheddar cheese, 1 tsp English mustard, Salt and pepper.

For the relish: 6 tbsp olive oil, roughly , 1 green pepper, finely chopped , 2 cloves garlic, peeled and finely chopped or pasted , 3 large ripe tomatoes, chopped, 1 tsp fresh chopped chilli , 2-3 tbsp vinegar – sherry vinegar preferably , Salt and pepper, 4 tbsp fresh chopped parsley.
