Jamie Oliver served up a delicious sour cherry frangipane tart with orange and cherry jam on Jamie: What To Eat This Week.
The ingredients for the sweet shortcrust pastry are: 250 g unsalted butter (cold) , plus extra for greasing, 500 g plain flour , plus extra for dusting, 100 g icing sugar, 1 orange and 2 large free-range eggs.
For the cherry jam: 300 g fresh cherries, 150 g golden caster sugar and 2 bay leaves.
For the frangipane: 250 g blanched almonds, 250 g golden caster sugar , plus extra for sprinkling, 250 g unsalted butter (cold), 1 vanilla pod, 3 large free-range eggs and 1 tablespoon plain flour.
For the topping: 1 handful of cherries, 1 teaspoon balsamic vinegar, 1 tablespoon golden caster sugar and creme fraîche or natural yoghurt , to serve.
