Jamie Oliver served up a delicious rhubarb and custard tart with almond and vanilla pastry on Jamie Cooks Spring.
The ingredients for the pastry are: 250 g unsalted butter (cold), 250 g ground almonds, 250 g plain flour, 2 large free-range eggs, 1 teaspoon vanilla bean paste and 100 g icing sugar.
For the rhubarb: 1 kg rhubarb, 1 Bramley cooking apple, 200 g golden caster sugar and 1 teaspoon vanilla bean paste.
For the custard: 600 ml whole milk, 3 tablespoons custard powder and 100 g golden caster sugar.
For the brittle: 1 tablespoon icing sugar and 50 g flaked almonds.
