Prue Leith ajiaco chicken soup with sweet corn, avocado, salad and mashed potatoes recipe on Prue Leith’s Cotswold Kitchen

Prue Leith served up a tasty Colombian ajiaco chicken soup with sweet corn, avocado, Guasca herb, salad and mashed potatoes on Prue Leith’s Cotswold Kitchen.

The ingredients are: 1 large chicken, 4 pts chicken stock, 2 garlic cloves, crushed, 1 lb small new or salad potatoes scrubbed, 3 medium Maris Piper, peeled and sliced (optional), Small teacup of dried Guasca herb, 6 fresh or frozen on the cob, cut into 2 – 3 chunks, 4 spring onions, cleaned and cut into one inch pieces, 1 teacup fresh coriander leaves, ⅓ pint double cream, ½ jar small capers, rinsed well and drained and 3 – 4 ripe avocados.
