Cherry and pistachio meringue recipe on Let’s Do Lunch with Gino and Mel.
The ingredients are: 2 large free-range egg whites, 110g white caster sugar, A few drops of natural red food colouring, 200ml double cream, lightly whipped, tbsp icing sugar, Seeds of 1 vanilla pod, 400g cherries, stoned, 2 tbsp amaretto, 2 tbsp water, 1 tbsp caster sugar and 50g pistachios, chopped.
