Gino makes a baked lemon and raspberry cheesecake for Keith Lemon on Let’s Do Lunch with Gino and Mel.
The ingredients are: 200g digestive biscuits, 75g salted butter, 600g cream cheese, full fat, 200g caster sugar, 200g mascarpone, 3 eggs, Zest of 3 lemons and juice of 1, 4 tbsp plain flour and 200g raspberries.
For the Topping: 200ml sour cream and 4 tbsp lemon curd.
For the sauce: 200g raspberries, 2 tbsp icing sugar and Juice of half a lemon.
