James Martin served up a delicious rhubarb and ginger crumble with orange and custard using his grandmother’s recipe on James Martin’s Saturday Morning.
The ingredients for the rhubarb are: 8 sticks of rhubarb, 1 blood orange, juice and zest, 1 tbsp ginger syrup, 2 knobs of stem ginger, diced and 50g caster sugar.
For the crumble: 200g plain flour, 100g butter, diced and 100g soft brown sugar.
For the custard: 8 egg yolks, 75g caster sugar, 300ml milk, 300ml double cream and 1 tsp vanilla bean paste.
