Juliet Sear served up delicious mocha cupcakes with chocolate coated coffee beans on This Morning.
The ingredients are: 165g butter spread (e.g. Lurpak) or margarine of your choice, 35g light olive oil or sunflower oil , 1 tsp vanilla bean paste or extract, 200g caster sugar, 4 medium eggs, 50g cocoa powder, 200g self-raising flour, ½ tsp baking powder, ½ tsp sea salt and 100g soured cream, room temperature.
For the frosting: 400g unsalted butter, softened, 800g icing sugar and 2 tbsp strong espresso powder combined with 2 tbsp hot water to make a paste.
To decorate: Chocolate coated coffee beans and Extra cocoa powder.
