Georgina Hayden served up a tasty Greek one-pan pastitsio with beef mince, creme fraiche, cheese and salad on Saturday Morning.
The ingredients are: 2 tbsp olive oil, 500g beef mince, 2 onions, finely chopped, 4 garlic cloves, finely chopped, 1 tsp dried oregano, plus a pinch, ½ tsp ground cinnamon, 2 tbsp tomato puree, 250g traditional pastitsio pasta, bucatini or penne (gluten-free, if needed), 1 litre beef stock, 300ml crème fraîche, 2 free-range egg yolks, 100g graviera, kefalotyri or pecorino, finely grated, sea salt and freshly ground black pepper.
For the salad: ½ red onion, finely sliced, 2 tbsp red wine vinegar, pinch caster sugar, pinch sea salt and black pepper, 2 baby gem lettuce, cut into thin wedges, ½ cucumber, thinly sliced, ½ bunch parsley, finely chopped and 2 tbsp extra virgin olive oil.
