Andi Oliver served up a tasty lobby style (lobbyish) beef brisket with chicken wings, ale, mustard and pearl barley on Andi Oliver’s Fabulous Feast.
The ingredients for the beef stock are: 500g beef bones and off cuts, 200g onions, chopped (about 1 large onion or 2 small), 3 garlic cloves, peeled and cut in half, 20g carrots, chopped, 20g celery, chopped, 4 bay leaves, 20g thyme, 20g rosemary, 300ml red wine, 500ml ale, preferably from Stoke-on-Trent, salt and freshly ground black pepper.
For the beef brisket: 100g honey, 60g English mustard, 1kg beef brisket, 25g all-purpose seasoning and 100g beef fat or dripping.
For the roasted vegetables: 250g carrots, finely chopped, 250g onion, finely chopped, 250g celery, finely chopped, 150g swede, finely chopped, 25g fresh thyme, leaves picked, 25g rosemary, chopped, 50g beef fat or dripping, cut into small cubes and 25g flatleaf parsley, finely chopped, to garnish.
For the crispy pearl barley: 120g pearl barley, 250ml rapeseed oil, for deep-frying and 1 tsp all-purpose seasoning, to taste.
