Andi Oliver served up a tasty chocolate hogget curry with seasoned rice and deep fried potato salad on Andi Oliver’s Fabulous Feasts.
The ingredients for the hogget are: 1kg hogget on the bone, chopped into large chunks (rinsed well in lemon water and drained), 3 tbsp green seasoning, vegetable oil, for frying, 300g medium onion, roughly chopped, 70g garlic cloves, peeled (about 1 large garlic bulb), 70g fresh turmeric, peeled, 10g black cardamom, 10g green cardamom, 10g star anise, 10g cinnamon sticks (about 5 sticks), 5g whole cloves, 20g ground cumin, 20g ground coriander, 2 Scotch bonnet chillies, finely chopped, 2 sprigs fresh thyme, 2 fresh bay leaves, 2 litres lamb or beef stock, 100ml molasses, treacle or carob molasses, 2 medium waxy potatoes, chopped, 80g dark chocolate (80% cocoa solids), 30g unsalted butter, salt and freshly ground black pepper.
