Meliz Berg served up Jute Mallow and Lamb Stew with Cypriot Seeded Bread and Vermicelli Rice on James Martin’s Saturday Morning.
The ingredients for the Jute Mallow & Lamb Stew (Serves 8-10 (with leftovers)) are: 5 tbsp olive oil, 1kg lamb leg or shoulder, cut into 3-4 cm (1 – 1.5 inch) chunks, 3 large onions, roughly chopped, 6 garlic cloves, finely chopped, 200g dried molohiya leaves, 2 x 400g cans chopped or plum tomatoes, 6 level tbsp tomato puree, 1 ½ tsp sea salt flakes, 1 ½ tsp ground black pepper, 1 tsp whole black peppercorns, 100ml fresh lemon juice and 2 litres water.
Cypriot Seeded Bread (makes one loaf):-
For the dough: 225ml lukewarm milk, 100ml lukewarm water, 3 tsp caster sugar, 7g fast-action dried yeast, 500g strong white bread flour, ¼ tsp ground cinnamon, ¼ tsp ground cloves, Pinch of mahlab, 1 ½ tsp salt and 1 ½ tbsp olive oil.
For brushing: 1 tbsp flour, 1 tsp water and 1 tsp milk.
For coating: 4 tbsp sesame seeds, 1 tsp nigella seeds and ¼ tsp aniseed.
