Gabriella Cugno served up a delicious Chocolate, Hazelnut Gianduja and Salted Caramel Biscuit Sandwich on James Martin’s Saturday Morning.
The ingredients for the Salted Caramel are: 200g sugar, 100g whipping cream (35% fat), 120g unsalted butter and Large pinch sea salt / about 3g.
for the Hazelnut Gianduja Filling: 150g milk chocolate, 150g hazelnut paste and Pinch sea salt.
For the Hazelnut Sablee Biscuit: 125g unsalted butter, 60g sugar, 170g plain flour, 30g ground hazelnuts (optional) and Pinch sea salt.
For the Nutty Chocolate Coating: 300g good quality milk chocolate and 60g chopped hazelnuts.
