Rick Stein served up a tasty beef chow mein with sirloin steak and shiitake mushrooms on Rick Stein’s Food Stories.
The ingredients are: 400g sirloin steak, fat removed, 1 tbsp cornflour, generous pinch ground white pepper, 1 tbsp oyster sauce, 125ml sunflower oil or vegetable oil, plus 1 tbsp, 250g dried egg noodles (4 nests), 150g beansprouts, 3 spring onions, trimmed and shredded lengthways, 100g mangetout, 100g shiitake mushrooms, sliced, 3 garlic cloves, chopped and 15g fresh root ginger, peeled and grated or finely chopped.
For the sauce: ½ tsp sugar, 1 tbsp oyster sauce, 3 tbsp soy sauce, pinch ground white pepper and 2 spring onions, finely sliced on the diagonal (to serve).
