Rick Stein served up a tasty Scotch egg with sausage meat, black pudding, fennel seeds and panko breadcrumbs for a ploughman’s lunch on Rick Stein’s Food Stories.
The ingredients are: 8 free-range eggs, 1 tbsp vegetable oil, 1 shallot, finely chopped, 400g sausagemeat, handful of flatleaf parsley, chopped, 1½ tsp fennel seeds, crushed, 200g black pudding, crumbled, 100g plain flour, 100g Panko or dried white breadcrumbs, 1 litre sunflower or vegetable oil, salt and freshly ground black pepper.
To serve: piccalilli, mustard or chutney.
