James Martin served up a tasty vegetable lasagne with aubergine, courgette, carrots and roasted peppers on James Martin’s Saturday Morning.
The ingredients for the sauce are: 1 clove garlic, minced, 2x 400g can chopped tomatoes, 400g grated tomatoes, 4 tomatoes, 100ml olive oil and 1 large bunch basil.
For the filling: 1 aubergine, sliced, 2 carrots. sliced, 2 courgettes, sliced and 4 roasted peppers.
For the sauce: 75g butter, 50g plain flour and 500ml milk.
To finish: 12 lasagna sheets, 200g mozzarella, torn and 50g parmesan, grated.
