Rick Stein served up tasty homemade crumpets with poached eggs, potted shrimps and chives on Rick Stein’s Food Stories.
The ingredients for the potted shrimps are: 100g butter, 2 blades mace, good pinch cayenne pepper, good pinch ground white pepper, 300g cooked peeled brown shrimps and 6 tbsp clarified butter.
For the crumpets: 150g plain flour, 1 tsp fast-action dried yeast, ½ tsp sugar, 1 tsp baking powder, ½ tsp salt, 200ml lukewarm water and 30g unsalted butter, melted, plus soft butter for greasing.
To serve: 6 free-range eggs and chopped fresh chives.
