Marcus Wareing served up a tasty roast spiced chicken with charred greens and a smoked garlic and tarragon mayonnaise on Tales from a Kitchen Garden.
The ingredients for the smoked garlic mayo are: 2 large garlic bulbs, 2 large egg yolks, 1 lemon, juice only, 1 tbsp Dijon mustard, 300ml vegetable oil and small handful garden herbs.
For the spiced chicken: 1 tsp ground cumin, 1 tsp dried chilli flakes, 1 tsp dried oregano, 1 tsp smoked paprika, ½ tsp garlic powder, 2 tsp sea salt, 1 tbsp soft brown sugar, 1 lime, zest only, 1 free-range chicken (about 1.5kg), 1 lemon, sliced, bunch garden herbs and olive oil.
For the charred garden greens: 800g mixed seasonal greens (such as cavolo nero and purple sprouting broccoli), 2 tbsp olive oil, 1 tbsp sea salt, 1 lemon, juice only, roasted garlic, handful garden herbs, salt and freshly ground pepper.
