James Martin served up a tasty tournedos rossini with brioche, spinach, watermelon and Madeira sauce on James Martin’s Saturday Morning.
The ingredients are: 3 slices of brioche, cut into circles, 3 x 250g fillet steaks, 25g butter, 15ml oil, Salt and pepper.
For the sauce: 50ml Madeira, 400ml demi glace, 15g butter and 200g wild mushrooms.
To serve: 80g spinach, Knob of butter, 3 slices of watermelon and 50g butter.
