Marcus Wareing served up a tasty Sussex steak with a bacon, bourbon whiskey and chilli jam sandwich on Tales from a Kitchen Garden.
The ingredients are: 2 thick sirloin steaks 4cm thick, 2 tbsp olive oil, 1 tbsp salt, 1 tsp chilli flakes, 1 tsp paprika, 1 tsp crushed peppercorns, 1 large ciabatta loaf, 2 tbsp Dijon mustard, 2 tbsp mayonnaise and 200g garden salad leaves (watercress or rocket work well).
For the bacon jam: 200g pancetta, 200g bacon lardons, 2 white onions, chopped, 6 garlic cloves, finely chopped, 2 red chillies, chopped, 2 tbsp bourbon whiskey, 2 tbsp maple syrup, 200g soft dark brown sugar and freshly ground black pepper.
