Cardiff Mum (Ashleigh Mogford) served up a thrifty coconut chicken meatball curry on this morning.
The ingredients are: 500g chicken mince, 4 cloves of garlic, grated, 3 tbsp soy sauce, Olive oil, 1 tsp grated fresh ginger, 4 tsp red Thai curry paste, or to taste, 1 red pepper, sliced, 1 pak choi, chopped, A handful of sugar snap peas, 1 x 400ml tin of coconut milk, 2 tsp peanut butter and 2 tbsp honey.
To serve: White rice, A handful of fresh coriander, chopped, 3 spring onions, sliced finely and A handful of dry roasted peanuts.
