James Martin served up a delicious Blackcurrant and Blackberry Delice with Blackcurrant Liqueur on James Martin’s Saturday Morning.
The ingredients are: 1/2 madeira cake thinly sliced and 1 tbsp blackcurrant liqueur.
For the topping: 700ml shop bought custard, 400ml double cream, lightly whipped, 200ml blackberry puree, 50ml blackcurrant liqueur and 10 sheets gelatine.
For the glaze: 300ml blackberry puree, 300ml sugar stock syrup and 3 sheets gelatine.
To finish: A few blackberries, Whipped cream and Mint sprigs.
