Marcus Wareing served up a tender fillet of beef with parsley and green peppercorn sauce for the festive season on Marcus Wareing Christmas.
The ingredients are: 2 x fillets of beef (approx 600g each), trimmed, Few sprigs of thyme, ½ bulb of garlic, chopped horizontally, 2 tsp black peppercorns – crushed in a pestle and mortar, 1 bay leaf, 100g butter, Sea salt and Vegetable oil, for cooking.
For the Sauce: Vegetable oil, 1 banana shallot, peeled and finely chopped, 3 cloves of garlic, peeled and finely chopped, 1 tsp green peppercorns (plus extra, to garnish), 2 bay leaves, 2 tbsp French mustard, 1 x beef stock cube, 100ml brandy, 1 tbsp creme fraiche and Small bunch of flat-leaf parsley, chopped.
To Garnish: Green peppercorns, Cracked black pepper and Parsley, chopped.
