Nigella Lawson speculaas biscuits ( Dutch Gingerbread biscuits) recipe on Nigella’s Amsterdam Christmas

Nigella Lawson served up delicious Dutch style speculaas gingerbread biscuits with black treacle for the festive season on Nigella’s Amsterdam Christmas.

The ingredients for the speculaas spice are: tbsp ground cinnamon, 1 tsp ground ginger, ¼ tsp ground cloves, ¼ tsp ground nutmeg, ¼ tsp ground coriander, ¼ tsp ground allspice and ¼ tsp ground cardamom.

For the speculaas biscuits: 300g plain flour, plus more for rolling, 1 tbsp speculaas spice (see above), ½ tsp bicarbonate of soda, ¼ tsp fine sea salt, 100g butter, softened, 100g soft light brown sugar, 100g black treacle (plus a little oil for greasing a jug for weighing the treacle in) and 1 large egg, at room temperature.

For the icing (optional): 225g instant royal icing powder.
