Marcus Wareing served up crispy baby new potatoes with Parmesan cheese and 3 dipping sauces (Marie Rose Sauce, chili sauce with mayonnaise and Anchovy and Caper Mayonnaise) on Marcus Wareing at Christmas.
The ingredients are: 2kg baby new potatoes, skin on, Olive oil, 9 cloves of garlic – skin on and bashed, A bunch of thyme, A bunch of rosemary, 100g unsalted butter, Freshly grated parmesan cheese, Salt and pepper.
For the Marie Rose Sauce: 300g mayonnaise, 100g tomato ketchup, 1-2 tsp brandy, ½ juice of a lemon, Pinch of cayenne pepper (optional) and Cracked black pepper, to serve (optional).
For the Chilli Mayonnaise sauce: 300g mayonnaise, 6 tbsp Siracha, Tabasco sauce, 4 Spring onions – sliced finely, Small bunch of chives, chopped, 2 cloves of garlic, finely grated / crushed and Chilli flakes, to dust.
For the Anchovy and Caper Mayonnaise sauce: 300g mayonnaise, 2 tbsp whole capers, ½ tin of anchovies, chopped, 3-4 tbsp sour cream, Squeeze of lemon, 4 tbsp freshly grated parmesan and 4 spring onions, finely shredded to garnis.
