Hasan Semay (Big Has) served up a tasty stuffed turkey breast with bread sauce on Saturday Kitchen.
The ingredients for the turkey brine: 130g caster sugar and 100g salt.
For the stuffed turkey breast: 1 turkey breast (around 1–1.5kg), skin on, 15–20 strips streaky bacon, 2 tbsp apricot preserve and cranberry sauce, to serve.
For the stuffing: 500g sausagemeat, 5 rashers smoked streaky bacon, finely chopped, 75g dried apricots, roughly chopped, 70g pistachios, crushed, 1 tsp black pepper and 1 tsp caster sugar.
For the bread sauce: 800ml full-fat milk, plus 100ml to finish, ½ onion, peeled and left whole, 2 sprigs fresh sage, 2 fresh bay leaves, 2 sprigs fresh thyme, 1 sprig fresh rosemary, ½ nutmeg, grated, 3 cloves, 1 star anise, pinch caster sugar, 400g stale sourdough bread, 25g unsalted butter, salt and freshly ground pepper.
