Marcus Wareing served up a tasty root vegetables crumble with celeriac and horseradish white sauce on Marcus Wareing at Christmas.
The ingredients for the Vegetables are: Olive oil, ½ large butternut squash, peeled, seeds removed and cut into chunks, 1 small celeriac, peeled and cut into chunks, 12 baby parsnips, peeled and topped and tailed, 6 cloves of garlic, skin on, Bunch of Thyme, 4 Tbsp Honey and Small handful of sage leaves.
For the Horseradish Sauce: 600ml milk (plus little extra if necessary), 2 bay leaves, 10 cloves, 50g butter, 50g plain flour, ½ bunch of thyme, 3 tbsp horseradish sauce, Sea salt and freshly ground black pepper.
For the Crumble Topping: 75g wholemeal flour, 30g rolled oats, 50g soft butter, diced, 50g grated cheddar cheese and 2 tbsp thyme leaves, plus extra to serve.
