Marcus Wareing buttery scallops with smoky chorizo and green sauce recipe

Marcus Wareing served up tasty buttery scallops with smoky chorizo and a raw green sauce on Marcus Wareing at Christmas.

The ingredients for the Green Sauce: 1 x green chilli, de-seeded (optional), 2 cloves of garlic, peeled, Small bunch of flat leaf parsley, Small bunch of coriander (reserve few sprigs), 2 tbsp of finely shopped shallot, Small bunch of mint (reserve few sprigs), 6 anchovies, Splash of white wine vinegar (optional), Good glug of extra virgin olive oil and Pinch of salt.

For the Scallops: 8 hand dived scallops, removed from shell, roe removed and cleaned (shells reserved and cleaned to present in), ½ chorizo sausage, diced, 2 tbsp finely chopped shallot and 50g unsalted butter.

To Serve: 8 cleaned scallop shells and Rock salt.
