Marcus Wareing served up a tasty turkey crown with sage stuffed turkey legs and shallot gravy on Marcus Wareing at Christmas.
The ingredients are: 4-5kg turkey crown, on the bone, 2 turkey legs , deboned, Salt and pepper and Olive oil.
For the Stuffing: 50g butter, 1 onion, peeled and finely diced, 2 garlic cloves, finely grated, 400g sausage meat, ½ tsp dried oregano, 1 bunch of sage, thyme, rosemary and oregano, finely chopped, Salt and pepper.
For the Gravy: Turkey trimmings and bones (chopped) , 2 tbsp vegetable oil , 2 banana shallots, cut into chunks (skin on) , 4 bay leaves , 1 garlic bulb (skin on), 2 rosemary sprigs , 2 thyme sprigs , 1000ml chicken stock , 2 tbsp plain flour , 100ml brandy, 250ml dry white wine and 2 tbsp tomato puree.
