Marcus Wareing served up a tasty glazed ham with marmalade and Earl Grey tea on Marcus Wareing at Christmas.
The ingredients are: 4kg unsmoked gammon, bone in , 2 onions, quartered , 3 carrots, halved , 4 celery sticks, 6 bay leaves , 1 tsp black peppercorns and 1 tsp cloves (plus extra to stud).
For the glaze: 8 Tbsp Earl Grey tea leaves, or 8 tea bags and 400g marmalade.
