Emma London served up a tasty Sausage and Fennel Pasta with salad on Steph’s Packed Lunch.
The ingredients are: 1 large carrot, peeled and chopped, 1 small bulb of fennel, chopped, 3 banana shallots, peeled and shopped, 1 stick of celery, chopped, 1 tbsp garlic puree, 500g sausage meat, Olive oil, to fry, 1 tsp sweet smoked paprika, 1 tsp freshly ground fennel seeds, 1 tsp balsamic vinegar, 500g Rigatoni Pasta, cooked, 1 tin of tinned cherry tomatoes, Black pepper to taste and Parmesan cheese to serve.
For the salad: 1 baby gem lettuce, leaves separated, ½ romaine lettuce, leaves separated, 50g Parmesan cheese, sliced, Pinch yeast flakes, 30g 5 seed mix, toasted, 30g pinenuts, 3 tbsp Olive oil and 1tbsp Balsamic vinegar.
