James Martin homemade tortellini pasta with mushrooms, ricotta and parsley oil recipe

James Martin served up tasty homemade tortellini pasta with wild mushrooms, ricotta cheese and parsley oil on James Martin’s Saturday Morning.

The ingredients for the pasta are: 250g 00 flour, 250g semolina flour and 3 large eggs.

For the filling: 400g wild mushrooms, 50g butter, 25ml double cream, 100g ricotta, Half a lemon, juiced, Salt and pepper.

For the sauce: 200g wild mushrooms, Few sprigs of thyme, chopped, 15g butter, 50ml Madeira, 50ml white wine and 200ml veal stock.

To serve: Few sprigs of fresh chervil and Chervil oil.
