Donna Hay served up tasty ricotta fritters with lemon rind and basil for a Aussie Brunch on this morning.
The ingredients are: 4 eggs, lightly whisked, 1 ½ tsp finely grated lemon rind, 10g finely chopped basil leaves , 60g finely grated Parmesan, plus extra to serve, Sea salt and cracked black pepper, 100g plain flour, 2 ½ tsp baking powder, 720g firm fresh ricotta and Extra virgin olive oil, for frying.
To serve: Rocket, Tomatoes, Parmesan , Basil leaves and Lemon wedges.
