Candice Brown served up a delicious apple and custard tart on Steph’s Packed Lunch.
The ingredients for the pâte sucrée (sweet tart dough) : 100g golden caster sugar, 100g unsalted butter, 4 medium free range egg yolks, 175g plain flour, plus extra for dusting, 25g ground almonds, Zest of 1 lemon and Pinch salt.
For the crème pâtissiere: 300ml whole milk, 75ml double cream, 1 tsp vanilla bean paste, 75g golden caster sugar, 3 medium egg yolks, 30g cornflour and 40g unsalted butter, in cubes.
For the apples: 3 large bramley apples or 6 smaller eating apples, peeled, cored and chopped, 50g caster sugar, Splash amaretto or rum, Pinch ground cinnamon, Splash of water, optional, 1 eating apple and Oil.
To serve: Fresh mint and icing sugar.
