April Jackson Caribbean shepherd’s pie with curry and sweet potatoes recipe

April Jackson served up a tasty Caribbean-style shepherd’s pie with curry and sweet potatoes on this morning.

The ingredients for the Lamb filling are: 1 tbsp butter, 1/2 onion, 3 cloves garlic, 1 tbsp all purpose seasoning, 1/2 tsp white pepper, 1 ½ tbsp curry powder, 1/2 teaspoon salt, 1/2 teaspoon turmeric, 1 baby handful fresh thyme, leaves picked, 2 bay leaves, 1/4 tsp ground allspice, 2 medium carrots, chopped, 1 scotch bonnet, pricked, 500g lamb mince, 250ml beef stock, 1 tbsp cornflour , 80g frozen peas and Oil, for frying.

For the Sweet Potato Purée: 900g sweet potatoes, cut into chunks, 30g butter, room temperature, 30ml double cream, 1/2 tsp cinnamon and Salt, to taste.
