Jamie Oliver makes Vietnamese salmon salad on his Money Saving Meals series that work out at £1.65 per portion.
Jamie says: “Back in the day, the French colonizers had a big influence on Vietnamese cuisine, so I’ve brought those two styles together to make brilliant use of leftover salmon in this delicious salad. With lots of crunchy veg, flaky salmon and a gorgeous dressing, it’s super simple, and the little slivers of apple add something magical.”
The ingredients are: 200 g ciabatta or stale bread, olive oil, optional: leftover salmon skin, 200 g fresh or frozen green beans, 1 thumb-sized piece piece of ginger, ½-1 fresh red chilli, 4 tablespoons extra virgin olive oil, 3 tablespoons white wine vinegar, 1 tablespoon low-salt soy sauce, 1 cucumber, 1 bunch radishes, 2 gem lettuces, 2 apples and 300 g leftover cooked salmon.
