Jack Croft and Will Murray served up tasty fried hen of the wood mushroom bites with coconut cream and seaweed on Saturday Kitchen.
The ingredients are: 200g hen of the wood’s mushrooms (maitake mushrooms), 20g kombu seaweed, 4 whole shallots, thinly sliced, 3 tsp salt, 120g plain flour, 60g corn flour, 60g tapioca flour, 1 tsp baking powder, 1 tsp garlic powder, 1 tsp paprika, 200g coconut cream, 1 lemon, juiced, vegetable oil, to deep fry, sriracha and lime juice.
