Dean Edwards served up a tasty Slow Cooker Cajun Chicken Pasta on Steph’s Packed Lunch.
The ingredients are: 400g chicken thighs, skinless and diced, 50g cured chorizo, finely diced, 1 onion, peeled and diced, 1 heaped tsp garlic paste, 2 heaped tbsp tomato puree, 1 heaped tbsp Cajun seasoning, 1 tsp smoked paprika, 1 x 400g tin chopped tomatoes, 250g rigatoni pasta, 250ml chicken stock, hot, 100g mascarpone cheese and 50g Cheddar cheese, grated.
To serve: 150g Parmesan cheese, grated.
